Our 100% Organic coconuts are a unique variety, with a lighter, more floral taste than most of the non-organic Brazilian coconuts used by the big coconut water brands.
All of our coconuts are cultivated and processed by a cooperative village network of thousands of small-holder farmers, living in bio-diverse multi-crop food forests. These same types of farms were the original inspiration for the sustainable permaculture movement. Whether gathering coconuts or harvesting sap for coconut sugar, these innovative farmers truly practice ‘sustainability’, using every part of the coconut and its “tree of life” to preserve the trees and their inter-connected ecosystem.
In addition to fair trade earnings, our farmers have received training in product diversity and value- added processing, rare and valuable skills in these remote communities that typically must sell their products on the open market at very low, unsustainable prices. In particular, the diverse multi-crop system they use protects them from fluctuations in the global market. Since our farmers grow more than one type of crop – things like vanilla, cacao, coffee, bananas, and papaya – a change in the coconut market or harvest will not devastate them, allowing them to retain ownership of their land and command better prices in desperate times. Training in processing their products (fermenting cacao, drying bananas, etc) also allows them to earn more at market.

Processing
97% of the delicious liquid inside a freshly cracked coconut is simply H2O...pure water. Shipping that heavy and expensive water halfway around the world is an incredibly extravagant waste (along with the energy used to refrigerate all those bottles on trucks and at the store). To top it all off, tons of plastic is wasted in bottling the stuff—why bother? We dehydrate the coconut water in Bali where the coconuts originate. The remaining powder (just 3% of the original weight of the coconut water) is what gives coconut water its incredible flavor and electrolyte nutrition...and once you add water, it makes for incredibly hydrating refreshment.
To make this amazing product, fresh young organic coconuts are harvested at the peak of ripeness (flavor is impacted by ripeness, so timing is crucial). The coconuts are transported to a central processing facility, where they are cracked open and emptied through a simple strainer into a stainless steel tank. The coconut water is then mixed with a small amount of tapioca dextrose as it is injected as a mist into a heated tank, evaporating the water and settling the coconut electrolytes and fruit sugars into a fine powder.

Vitamins and Minerals
Coconut water replenishes minerals (a.k.a. "electrolytes"), particularly Potassium, providing 2-4 times more than your average banana. Coconut water also replenishes Manganese and Magnesium. Not only is Potassium important for proper muscle function and cramp prevention, Potassium and Magnesium are known to play a role in cardiovascular health. Coconut water also provides crucial trace elements like zinc, selenium, iodine, sulfur, boron, and molybdenum, mostly drawn from the volcanic soil of Bali. Coconut water also replenishes Phosphorous, Calcium, Sodium and Iron, and is a good source of Vitamin C and Riboflavin (Vitamin B2), as well as several other B vitamins (B1, B3, B5, B6, B7 and B9).

Carbohydrates
Coconut water provides a quick dose of carbohydrates, perfect for replenishing energy reserves during or after exercise. The carbs consist mostly of glucose (50%), then sucrose (35%), followed by fructose (15%).
