Our Organic Olive Oil contains approximately 9 calories per gram and is 80% oleic acid essential for the control of cholesterol. The acidity of the oil is less than 0.05%, which preserves the intense flavor and aroma. Why This Olive Oil is Unlike Any Other

This is the recipe for great olive oil: Take one Spanish Chemical Engineer, add one German Textile designer, and marinate on 48 acres of Peruvian desert.

Jose “Pepe” Vico and his wife Margit first created a paradise for themselves, and now they share their love with us via their amazing olives. First, there’s the farm: a stretch of Peruvian coastal desert that has never been exposed to chemical pesticides or fertilizers.   Using innovative permaculture techniques, our partners turned this salty desert into a sustainable oasis—the first organic farm in Peru, rich with biodiversity. In addition to its organic status, the farm EUREGAP Certified for "Good Agricultural Practices," and the olives are certified Kosher.

Second, there are the trees: nestled among groves of pomegranate and citrus, this unusual strain of Botija trees is the hardiest we’ve ever seen, and it produces a large, plum-like olives with a robust flavor and meaty texture.

Third, there’s the processing: every olive is manually harvested and pitted, then prepared using healthy lacto-fermentation (instead of the fast, cheap vinegar or lye preparation commonly used today).

While most other olive oils claim to be “cold-pressed,” they are usually produced at hundreds of degrees, destroying enzymes and vital nutrients.  Essential Living Foods’ oil is truly cold-pressed—production temperature never exceeds 70 degrees Fahrenheit—and then naturally decanted to produce a living oil, ensuring excellent flavor and incredible health benefits.

Our Organic Extra Virgin Olive Oil is "an essential natural fruit  juice extract,” a must in every kitchen. Heat alters oil's fine structure making it less desirable for our bodies so we avoid it  completely. Essential Living Foods’ olives are manually harvested at the point when the color changes and then are selected, washed with pressurized cold, clean water, and passed through a dicer to obtain an olive mush.  Instead of using a centrifuge or a fast, hard squeeze in a hydraulic press to remove the oil, which would create heat (but which almost every other oil extraction process uses); we do a very, very slow pressing – truly cold pressed as the temperature never rises above 70° F, so all of the beneficial properties, rich flavor and heady aroma are preserved.  Due to low temperature processing, the fats in the oils tend to solidify at lower temperatures and may cause a cloudy appearance.
