Cacao is grown in tropical regions all over the world, and each region has different varieties and different flavors. The chocolates most people are used to eating are made with roasted beans, with lots of sugar added. After all that processing, the origin of the cacao beans doesn’t matter much. Premium dark chocolates are starting to recognize the subtle flavor variations that come from different regions – offering single origin chocolates. In raw chocolate, and especially in raw cacao (100% dark chocolate), the flavor of the bean is much more important than in roasted chocolates.
