We start with our finest quality, heirloom strain of 100% RAW cacao, the prized Cacao Nacional Fino de Aroma. Proprietary processing methodologies that we developed keep the temperature below 45 degrees Celsius at all times, maintaining the delicate enzymatic activity and amazingly high anti-oxidant levels of raw cacao. The quality of the beans we source from the finest, heirloom strain in Ecuador, gives our raw chocolate not only the finest flavor of any raw chocolate you’ve ever had, but we think it tastes even better than even premium, traditionally roasted chocolates!
To make chocolate from cacao is a complex, time-intensive process. Even though the only added ingredient is a sweetener, how that sweetener is mixed into the cacao, and at what temperatures, is critical to get the flavor and texture right.
We sweeten our raw chocolate with a variety of sweeteners – dehydrated cane juice, low-glycemic coconut sugar, and low-glycemic agave nectar. This maintains all the antioxidant qualities of the raw cacao without the bitterness of 100% dark chocolate.
